I used to think you had to spray or toss wings in oil before air frying or they'd turn out dry. Tried a batch with absolutely nothing on them last week and they came out crispier than any oiled batch I've done. Anyone else skip the oil on purpose?
Read somewhere that the fat already in the skin renders out and does all the work, so oil is pointless for good wings. Tried it myself and that's TRUE.
Honestly I was skeptical too but yeah, totally agree. Patting them dry is key though. That extra moisture is what makes them soggy, not the lack of oil. I do mine at 380 for about 25 minutes and they come out perfect every time now.
