My aunt in Phoenix showed me her trick for air fryer potatoes last Thanksgiving

She was pulling a tray of crispy potatoes out of her air fryer and said, 'The secret is to soak them in cold water for 30 minutes before you cook them.' I was just used to chopping and cooking them right away, which always gave me soggy results. She dried them with a paper towel, tossed them in a little oil, and they came out perfect. Has anyone else tried this soaking method with other veggies?

My uncle does something similar with eggplant to get the bitterness out. He slices it, salts it, and lets it sit for an hour before rinsing and patting it dry. It pulls out a lot of moisture and makes it less spongy when you cook it. I tried it once before making eggplant parmesan and it was a total game changer. The texture was way better, not soggy at all. It's basically the same idea as the potato soak, just with salt instead of water.

Actually, you want to soak them in cold water after salting and rinsing. If you just salt and let them sit without rinsing, they'll be way too salty. I learned that the hard way when I made eggplant parmesan that tasted like a salt lick.
