My brother said my fries were always soggy and I finally listened

He came over last summer and straight up told me my air fryer fries were limp. I was just putting them in raw. Now I soak the cut potatoes in cold water for 30 minutes first. Dry them really well with a towel. The outside gets way crispier. Anyone have a good trick for seasoning them after?

Honestly that soaking step is just extra dishes for no reason. Tbh I throw my raw potatoes straight in the air fryer and they come out fine every time. The key is just to not overcrowd the basket and shake them halfway. All that soaking and drying feels like making a science project out of some fries.

My buddy swore by soaking too, but his still came out soft until he started patting them bone dry with paper towels. What's your go-to seasoning after they're crispy?

Have you tried a simple garlic salt and black pepper combo? I messed around with different seasonings for months, and honestly that basic mix is what stuck for me. The key is hitting them right when they come out of the air fryer while the oil is still hot, so the seasoning sticks better. I also add a little smoked paprika maybe half the time, but that's more for color than flavor in my experience. Your mileage may vary though, some folks swear by the fancy spice blends, but simple has always worked best for my crispy fries.

Yeah, that drying step is a total game changer.
