Showerthought: I was lining the basket with foil for a solid year before I figured out why my wings kept steaming
For about 12 months I wrapped the basket in foil because cleanup was a pain, and every batch of wings came out pale and rubbery no matter how long I ran them at 400. Then it hit me that I was basically trapping all the moisture in a sealed pocket, so nothing could ever crisp, and the fix was just a cheap perforated parchment liner that lets air move under the food. Does anyone else have a "why did it take me this long" moment with their air fryer, or am I the only one who fought the machine for a full year?
Watched my buddy do the exact same thing with his basket for months. He kept stacking frozen fries on top of each other too, then wondered why half of them came out soggy while the rest turned into little rocks. Turns out he was basically steaming the poor things in their own ice, same deal as your foil situation. A liner with holes and a single layer of food fixed his fries overnight, and he was mad he didn't figure it out sooner.
