Unpopular opinion: microwaving my potatoes for 5 minutes before the air fryer made the best wedges I've ever had
I was in a hurry last Tuesday so I stabbed two russet potatoes, nuked them for 5 minutes, cut them into wedges, tossed them in oil and paprika, and air fried them at 400 for 12 minutes. The inside was fluffy like a baked potato but the outside had this shatter crispy shell that I never get when I start from raw, and my roommate who hates my cooking experiments ate half the tray standing over the sink. Does anyone else par cook their potatoes first, or am I just late to something everybody already knew?
Par cooking is the way to go for sure. I do mine in the microwave for about 6 or 7 minutes depending on size, then let them cool a bit before cutting so they don't fall apart. The trick is to dry them off with a paper towel after nuking, because any wetness on the surface steams them in the air fryer instead of crisping up. Also try a light dusting of cornstarch with your oil and paprika, it takes that shell to another level.
