Pro tip: I used to throw away vegetable scraps without a second thought
Started saving carrot peels and onion ends in a bag in the freezer last month after a friend mentioned she makes stock from them. Simmered a batch last night with some chicken bones and it tasted way better than the boxed stuff. Anyone else do this or am I just being cheap?

One thing nobody mentions is how much less trash you create by saving those scraps. My kitchen bin stays emptier and I feel better knowing I squeezed every bit of flavor from my produce. That alone makes it worth the small effort.

Right there with you. I started saving carrot tops and onion skins for broth and now my trash barely fills the bag over a week. The biggest thing for me was realizing how much vegetable matter I used to just chuck in the garbage. Now the scraps sit in a freezer bag until I have enough to simmer down. It's not fancy but it makes a real dent in what goes to the landfill. Plus the broth has way more flavor than the store bought stuff.
