90 minutes watching a master baker's sourdough feeding videos and I'm a convert
I always thought the whole starter feeding schedule was just internet hype until I saw this guy in Portland show his process live with a kitchen scale and a thermometer. Now I realize I was half-assing it for years. Has anyone else had that moment where watching someone else's technique made you totally rethink your approach?

Oh, I know exactly what you mean. It's funny how seeing someone do something the right way can make you realize you were just going through the motions. I think that happens with a lot of things in life, not just baking. We pick up habits from watching others or just guessing, and we never stop to question if there's a better way until we see a real expert at work. It's like when I finally watched a pro trim a tree and realized I'd been butchering my poor maples for years with a dull saw and bad cuts. Sometimes you just need to see the real deal to finally understand what you've been missing.

Oh man, the tree trimming bit got me. I tried pruning my lemon tree last year after watching one YouTube video and ended up looking like I was trying to murder it. Three branches left and a weird zigzag shape. My neighbor still calls it the "Charlie Brown Christmas tree." Guess some of us have to learn the hard way that there's a big difference between knowing how to do something and actually being good at it, huh?
