A customer at the farmers market told me my sourdough was 'too perfect'
She said it looked like it came from a factory, and she wanted to see more of the 'hand' that made it. I've been so focused on consistent scoring and oven spring that I forgot some people buy from me for the character. Do you ever hold back on the 'perfect' finish for a more rustic look?

Have you thought about maybe changing up your scoring pattern on some loaves? Like, instead of that neat line you do, try a few quick slashes that look more freehand. I sometimes leave a little extra flour on mine if I want it to look more like it just came off the board, not out of a box. It feels weird at first to not fix every little thing, but some folks really do see that as part of the charm.

Wonder if they'd complain that a machine made it if you used a really ugly scoring pattern?

People get weird about bread sometimes. You spent all that time learning to make it right, and now someone wants you to make it look wrong on purpose. If the bread tastes good and you're happy with it, that's what matters. Changing your process to fit one person's idea of "rustic" seems like overthinking it. They can always go buy a lumpy loaf from someone else.
