A customer told me my sourdough starter was 'too aggressive' last Saturday
This lady at the farmers market said my starter smelled like it was 'angry' and asked if I could mellow it out. I just stared at her for a second and asked if she wanted a milder loaf instead. Has anyone else gotten weird complaints about the tanginess of your bread?

I gotta respectfully push back on this a little. I mean, yeah, it sounds ridiculous when you say it out loud, "angry sourdough." But I've seen people go through some real battles with their starters, like it's got a mind of its own. You ever watch someone spend three days feeding a starter, talking to it, and then the loaf comes out flat and hard as a rock? That's not funny in the moment, that's frustration with a capital F. So I get why someone would call it angry, even if it does sound silly on the surface.

See, I actually get where the whole angry sourdough thing comes from. You ever try to bake a loaf and it just refuses to rise, like it's holding a grudge against you? That's not funny, that's a personal betrayal from your starter. I've had batches where the dough was so stiff and uncooperative I wanted to toss it out the window. So maybe calling it angry is a little dramatic, but there's definitely some truth to the struggle.
