Appreciation post: my sourdough starter finally hit full rise in 4 hours

After 3 weeks of feeding my starter in my tiny Boston apartment, it finally doubled in size on Tuesday after just 4 hours on the counter. I nearly cried when I saw that dome. Used it for a basic country loaf from the King Arthur recipe and got the best crumb I've ever had. Anyone else spend way too long staring at a jar of flour and water hoping for bubbles?

Oh man, I heard somewhere that apartment humidity actually helps starters stay active, so maybe that's why yours took off @robert659! Totally get the chore feeling though, I've definitely had days where I looked at that jar and thought "you better perform today.

Honestly I think half the appeal of sourdough is getting to play scientist with a jar of goo lmao. Nothing beats the validation of those tiny bubbles finally showing up.

...and I honestly see it the opposite way. Getting my starter going just felt like another chore, not a science experiment. The whole "playing scientist" thing that @sanchez.mary mentioned never clicked for me. I just wanted bread. I kept staring at that jar thinking come on already, do your job. Maybe if I lived somewhere with more consistent heat and less humidity I'd have a different take.
