My neighbor in Austin said my sourdough was 'too sour' and it got me thinking
She's not a baker, but she's eaten my bread for years. She said the last few loaves had a sharpness that made her jaw clench, and she preferred the milder version I made about 6 months ago. I realized I've been pushing my starter's fermentation time longer and longer just to get that 'artisan' tang, but maybe I lost the balance. Has anyone else had a regular customer point out a shift in your signature product that you didn't even notice?

I read somewhere that our taste buds change every seven years, so maybe her palate shifted.

Oh no, poor guy. That's rough when someone nails your hard work with a comparison like that, especially coming from regulars who usually get what you're going for. Hope he knows it's probably just a miss, not a sign he's lost his touch.
