My sourdough starter turned green after I left it out during a heatwave
I was baking at my apartment in Phoenix last July and forgot my starter on the counter for three days when the AC broke. When I got back, it had a layer of greenish mold on top and smelled like a swamp. Has anyone ever tried saving a starter that looked this bad or do you always toss it and start over?

Did you try scraping it off first? I used to think you could save anything, but that changed my mind.

Oh man, that's rough. I've been there with a starter gone bad in the heat. For that green mold, I'd say it's a hard toss. In my experience, mold with color like that means it's gotten into the whole thing. I've tried scraping off a little fuzzy white mold before and gotten away with it, but green is a different story. That swamp smell is also a bad sign your mileage may vary but I'd just start fresh rather than risk it.

Totally agree, green mold isn't worth messing with. You can try saving a starter if it's just a little hooch on top, but colored mold means the whole thing is compromised. Better to just dump it and start over than risk getting sick.
