TIL my grandma's weird coin trick for flat cakes

Stuck a penny in the tin and it actually worked.

Always heard about that trick but never tried it myself. The coin carries heat to the center so the cake bakes more evenly. Stops the middle from puffing up too high.

Yeah, the part about the science being a lot for just a cake is fair. It feels like a lot of work sometimes, but I get it when a recipe just doesn't turn out right. My last one was a total dome top disaster.
