Update: I finally tried the 'no-knead' bread method from that New York Times recipe
For years I thought it was just a lazy gimmick, but after letting the dough sit for 18 hours, the crumb and flavor were way better than my usual 2-hour loaf. Anyone have other low-effort recipes that actually deliver?

Low effort recipes" kinda miss the point of baking for me.

That 18-hour wait is a game changer, isn't it? I felt the same way about slow-rise pizza dough. Mixing it on Friday night and just letting it sit in the fridge until Sunday makes the crust taste so much better with almost no real work. It's like the flavor just builds on its own while you do other stuff.

Honestly, the real magic is how these slow methods trick you into baking more often. Like @the_christopher said, you mix it and forget it. My fridge has a permanent container of that pizza dough now. It feels less like a project and more like a ready-to-go ingredient. That low barrier means I actually make fresh bread or pizza on a random Tuesday instead of just thinking about it.
