Baking powder biscuits the way my dad taught me, no food processor needed

Many bakers use food processors for biscuit dough now. My dad always mixed by hand until just combined. His biscuits were flaky and tender, never tough. I stick to his method, even with more work.

Reading this reminded me of my own biscuit disasters with a food processor. The blade cuts in the fat too fine and heats everything up. Hand mixing lets you keep those butter pieces chunky and cold for better layers. There's a real skill in knowing by touch when the dough is just right, not by a timer. Your dad's way probably saves the texture that machines can ruin without you even noticing.

Park.miles is totally right about the butter getting too warm. My first few batches turned out like hockey pucks because the processor turned everything into a paste. You really need those little cold butter bits to steam and puff up in the oven.
