Bought a fancy $25 pastry blender - first pie crust was perfect
I've been making pie crusts for years with two forks and always ended up with tough dough, so I caved and bought a high-end pastry blender for $25 at a kitchen store last weekend. First try I got that flaky texture I've been chasing, no overworking the butter at all. Has anyone else found one specific tool that finally fixed their baking fail?

Has anyone tried using a pastry blender to cut cold butter into flour for biscuits instead of pie crust? I got one for the same reason but now I use it for scones and even mixing in chunks of cream cheese for danish dough. The trick is keeping everything icy cold, even the blender itself in the freezer for 10 minutes before you start. It changed my baking more for those quick breads than pies actually.

Forty bucks for a pastry blender? That's insane, you can get a decent one for like ten dollars at any kitchen store.
