I used to bake my grandma's banana bread recipe for 55 minutes. Now I pull it at 48 minutes and it's so much better.

Just accept that the temperature dial is a suggestion, not a rule. Mine has a 50 degree range of chaos on any given day. I put cookies in at 350 and they either come out raw or I set off the smoke alarm. At this point I just watch through the window and pray.
