Just realized everyone at my local bake sale overmixes their muffin batter

Honestly, it makes them tough and peaked, not soft and domed. I learned from a baker in Charleston to stop at 'just combined' after my third batch turned out like hockey pucks. Anyone else see this happen a lot?

A "crime against muffins" is putting it lightly. It's like they're trying to build a tiny, edible brick instead of a breakfast treat. Some people just can't stop stirring.

But seriously, do you think it's a lack of knowledge or just pure habit? Like they see a few lumps and panic, thinking raw flour is worse than a tough crumb. I've tried to gently mention it before and just get blank stares.
