My cake used to collapse until a bakery owner told me I was opening the oven too early

She said wait until the last 10 minutes of baking before even peeking, and now my sponge cakes actually stay puffy. Anyone else have a simple fix like that that saved your bakes?

Gotta disagree, peeking early never caused my cakes to fall.

Did you check your oven temp with an extra thermometer? My oven runs 25 degrees hot, kept opening the door trying to fix things and my cakes sank. Once I got a cheap oven thermometer and trusted it, plus waited until the last 10 minutes before even thinking about peeking, my cakes started coming out perfect every time. It might not be the peeking itself but what's happening in your oven when you open it.

@ryanm60, my cakes fell flat every time until I stopped opening the door at all.
