My first attempt at a layered cake turned into a slide show last Saturday
I was visiting my aunt in Portland and she dared me to try making her famous chocolate layer cake. I got the layers baked okay but when I stacked them with frosting, the whole thing started tilting like a tower of blocks. After about 10 minutes of me trying to fix it with extra frosting and toothpicks, the top layer just slid right off onto the plate. Has anyone else had a cake collapse on them like that?

That whole "tower of blocks" thing is exactly what happened when I tried to make a tiramisu once. I had the layers all lined up nice in the dish, but then I put way too much coffee soak on it and the whole thing just sank into a soggy puddle. I ended up eating it with a spoon out of the bowl, honestly it was still good though.

Did you hear that some chefs actually freeze their ladyfingers first to control how much coffee they soak up?

24 hours in the fridge is a hard rule for tiramisu. If you rush it the layers never set right and you get that soggy mess. I started dipping the ladyfingers for literally 2 seconds max on each side, one quick dunk then out. You want them damp not soaked through or they turn into mush.
