My starter finally hit 90 days on the counter and I almost threw it out on day 12
Started my sourdough starter back in March and honestly day 12 was rough, it smelled like old socks and grew nothing so I almost dumped it down the sink. Fast forward and that same jar just passed 90 days of daily feeds and my last loaf came out with a rise I never got from the store yeast packs. My grandma kept a crock in her kitchen for what felt like forever and I always thought it was overkill, but now I get why she never skipped a feeding. The weird part is my worst bakes happened around day 30 when I thought I had it figured out and stopped weighing the flour. Lesson learned, the scale stays out on the counter now next to the jar. Has anyone else had a starter that looked dead for a week and then came roaring back?
That day 12 slump is so real, and it sounds like you did the right thing by just waiting it out. Mine sat there doing nothing for almost two weeks and smelled like gym socks, and I was fully ready to toss it. Then one morning it doubled out of nowhere and I felt like an idiot for doubting it. The 30 day part made me laugh because that is exactly when I got cocky too and started eyeballing the flour. Bad move. The scale being out on the counter is the smartest habit you can build, so good on you for sticking with the feeds. Here is to 90 more days and a lot more good loaves.
