Picked boxed cake mix over scratch for my kid's birthday and I'm still hearing about it
My daughter turned 7 last Saturday and I had exactly 90 minutes between work and the party, so I grabbed a box of yellow mix instead of pulling out the flour and butter. My mother in law took one bite and asked, real quiet, if I'd used a mix, and my kid shrugged and said the cupcakes were dry. Anyone got a from scratch yellow cake recipe that survives a rushed bake?
Oh man, been there. My go to is the one bowl yellow cake from the Betty Crocker cookbook, you just dump the dry stuff in, add soft butter, eggs, milk, and vanilla, then beat it for two minutes and bake. It holds up fine if you pull it a minute or two early and let it cool in the pan, and nobody at my house has ever clocked it as homemade vs box.
