Seriously, weigh your flour for banana bread, my loaf came out like a brick until I tried it
I scooped 3 cups straight from the bag for 2 weeks and got dense hockey pucks every single time, then a friend said 120 grams per cup and my next loaf was perfect. Anyone else been scooping wrong your whole life?
Same here, mine used to come out so dense you could use it as a doorstop. Turns out I was packing the flour down when I scooped, so I was probably adding an extra half cup every time without even knowing it. Got a cheap kitchen scale last month and it changed everything, the bread is finally soft and actually rises. My mom has been baking for 30 years and still swears by the scoop method, so I just let her live in her bubble. Now I weigh everything, even sugar, because why not.
