Update: I had to pick between a new recipe or my old one for my sister's wedding cake
My sister wanted a lemon raspberry cake for her wedding in Austin, and I was torn between a fancy new recipe with buttermilk or my simple, reliable one. I went with the new one to impress everyone, but the layers came out dense and gummy. I had to remake the whole thing the night before with my old recipe. Has anyone else had a wedding cake disaster with a 'better' recipe?

Oh man, you are so right. I mean, I once tried to make some fancy bread from scratch for a date, and it turned into a brick. Should have just bought the nice loaf from the store. The need to look impressive totally backfires. Now I just make box brownies for everything and pretend I'm a purist who believes in the classics. Works every time.

New recipe for something important" - that's the trap. I've been burned the same way with barbecue. Switched to some fancy rub with coffee and cocoa for a family reunion. Tasted like dirt. Had to scramble and make my old standby. Simple and proven wins every time on the big stage.
