Finally figured out why my bread kept collapsing after 8 tries

Turns out I was opening the oven door to check on it every 10 minutes like a nervous parent. Has anyone else had a simple fix that took way too many failures to find?

@amy_west exactly, it's crazy how one little thing screws everything up... for me it was water temperature. kept using tap water straight from the faucet, way too cold in the winter. took me seven batches of dense bricks before i realized i needed warm water around 100 degrees.
