Guy at the farmers market showed me how to stretch a pound of ground beef into 4 meals
He was selling his own beef and told me to mix in a cup of cooked lentils and a grated zucchini per pound. Has anyone else tried bulking up meat with veggies like that and does it actually hold together in tacos?

Wouldn't the zucchini make the tacos soggy though?

Okay so here's the thing nobody's talking about - you gotta salt the zucchini first and let it sit for like 15 minutes. That draws out all the extra water so it doesn't turn your tortilla into a soggy mess. I learned that trick from my aunt who makes these bomb veggie tacos and she taught me to pat them dry with paper towels before cooking too. The zucchini actually gets this nice crispy edge if you sear it hot and fast in a cast iron pan. Plus if you pick the smaller firmer zucchinis from the store they hold up way better than the big mushy ones. So yeah it's totally doable without sogginess just takes a little prep work is all.

Oh wait, actually you gotta salt them first or they'll soak through the tortilla anyway.
