Honestly, I thought dried beans were a total waste of time

Tbh, last month I was broke and staring at a bag of black beans I got for $1.50. I always thought you had to soak them forever and they'd still be hard. But I followed a tip from a cooking video, boiled them for an hour with some onion and garlic, and they were perfect. I got like six meals out of that one bag, plus some rice. It completely changed how I shop. What's your go-to cheap bean recipe that doesn't take all day?

What kind of onion did you use, just a plain yellow one? I've found a little smoked paprika and a bay leaf in the pot while they boil makes a huge difference, even if you don't have stock.

Smoked paprika, huh? How much do you add?

Honestly depends on the pot size for me. Like for a big pot of soup, I'll do a full teaspoon, but for just seasoning some roasted potatoes maybe half. Do you find it gets too smoky if you go over a certain amount?
