I finally heard someone say beans and rice is a cop out meal
Was at the grocery store in Portland last Tuesday and overheard this guy telling his friend that beans and rice meals are just lazy cooking for people who don't care about flavor. I mean sure, I get wanting variety, but beans and rice got me through some rough months when I was between jobs and my food budget was like $30 a week. Has anyone else gotten side eye for relying on the cheap staples that actually work?

My buddy's grandma in New Orleans would smack that guy with a wooden spoon. That combo is literally the backbone of Cajun cooking and nobody calls that lazy.

Beans and rice is lazy cooking" is such a weird take. My friend Sara once brought her famous red beans and rice to a work potluck, and this lady in HR actually asked her if she was "going through something" financially. Like no, Linda, she just knows how to make a damn good meal for $4 that feeds her family for two days. That kind of judgment is so out of touch, especially when you think about how many cuisines literally built their identity around that combo.

That "going through something" comment from HR Linda is wild. Like yeah, she's going through something alright - going through a damn tasty potluck line. If beans and rice is a cop out, then half the world's cuisines are just mailing it in, from Caribbean rice and peas to Indian dal chawal. People really forgot that some meals are cheap not because they're lazy, but because they've been perfected over centuries.
