My uncle told me frozen veggies are just as good as fresh for soup

I always thought fresh was better so I avoided frozen. Last month I made a big pot of lentil soup and used a bag of frozen mixed vegetables from the grocery store. It cost me $1.50 versus like $5 for fresh carrots and celery. The soup turned out fine and I couldn't tell the difference. Has anyone else found frozen works just as well for certain meals?

Yeah frozen is the way to go for soup. I do the same thing with frozen mixed veggies for chicken soup or minestrone. The key is to not thaw them first, just dump them straight into the pot frozen or they get mushy. For something like a stir fry where texture matters more I still go fresh, but for soup or stews frozen is a no brainer.

Frozen veggies are picked at peak ripeness and flash frozen so they actually hold more nutrients than fresh produce that's been sitting in a truck for three days. Fresh is mostly a marketing gimmick for soup.

Ray_williams is spot on about the nutrient thing, I've seen that study too. It's one of those situations where the "obvious" choice isn't actually better, happens all the time with kitchen stuff. Really makes you rethink what shortcuts are actually fine to take.
