Pro tip: my $3 head of cabbage lasted me 8 meals and I almost threw it away
Honestly I used to be one of those people who thought cabbage was just for coleslaw and St. Patrick's Day. Last month I bought a whole head for $3 at Aldi in Columbus and was about to toss it when I noticed it was still totally fine after 3 weeks in the fridge. I ended up roasting half of it with olive oil and salt at 400 degrees for 25 minutes and it caramelized so sweet I ate it like popcorn. Then I shredded the other half and tossed it into a stir fry with soy sauce and a beaten egg. The crunch lasted all week in my lunch bag and I didn't waste a single leaf. Has anyone else found a cheap veg that just keeps going way past what you'd expect?

Whoa, I'm gonna push back on this a bit because I feel like cabbage gets way too much hype lately.
A $3 head of cabbage might last physically, but I've found the flavor gets bitter and sulfury after week one unless you cook it heavy with fat and seasoning, and by day 8 I'm basically forcing myself to eat sad, soggy leftovers just to prove a point.
@felix414 blowing through a whole cabbage in two weeks sounds about right for one guy, but for a family of four that thing barely covers a couple of sides, and you can't tell me it tastes good by the end.

And here's what's wild, Felix - that $3 investment basically pays for itself when you realize you don't have to buy bagged salad kits or fresh spinach that goes bad in 3 days. Cabbage is basically the cockroach of the produce aisle, but in a good way.
