What if you skip the fancy stuff and just use basic lentils and veggies? I make lentil stew all the time and it's still super cheap. Kale and quinoa are just optional, you know? The cost only goes up if you buy into those trends. Why pay triple when the classic recipe is just as good?

Totally, I read something about how kale got crazy popular as a superfood and then the price shot up. Classic lentils and carrots are still packed with protein.

My local store has store brand lentils for like a dollar a bag. The whole "superfood" label is just marketing to make basic things seem special.
