Took me 2 years to figure out I was over-stirring my rice every single time

I kept making sticky clumpy rice for years and thought it was just my cheap cooker. Then I watched my buddy in Seattle just rinse and fluff once while I was over there for a party. I always stirred it like crazy mid-cook thinking it helped it cook even. Now I just leave it alone after the boil and it comes out perfect every time for like 50 cents a bag. Anyone else have a kitchen habit they did wrong forever?

Over-stirring mid-cook"? That's like something straight out of a cooking horror movie.

Three minutes of aggressive stirring makes any gravy silky smooth in my experience.

I read somewhere that over-stirring can break down the starch too much and make it gluey.
