Turned 3 pounds of chicken into 6 meals for under 12 bucks
Last week I finally tried the whole "shredded chicken in bulk" thing after seeing it mentioned here. Got a family pack at the store for $8.50, threw it in the slow cooker with some onions and a jar of cheap salsa, let it go for 6 hours. Shredded it up and split it into containers. Used it for tacos one night, over rice with beans another, mixed into pasta sauce, and made two batches of quesadillas. Also threw some in a pot of soup with frozen veggies. My lunch for the whole work week was covered and I still had leftovers. The trick was doing all the shredding while the chicken was still warm, took maybe 15 minutes. Anyone else do the big batch thing? What's your go-to cheap protein that stretches the furthest?
