Appreciation post: I spent a full day trying to get a clean break on a beef chuck roll before I realized my steel was the problem.

What's your go-to method for keeping your blades sharp when you're breaking down a whole side?

Ever try to sharpen a knife with a coffee mug? I did, and it went about as well as you'd think. I get what @blakestone means about the ceramic rod, that kind of steady touch-up is way smarter. My tools and I are still working on our trust issues.
