Dry aging was hit or miss for me until an old timer shared his cracked ice method

I wrap the meat in cheesecloth and pack cracked ice around it in the cooler, which keeps the humidity steady and prevents waste.

Honestly @the_drew I used to feel that way too but the process itself changed my mind.

Actually the payoff just looks different sometimes. It can be about the process itself, not just the end result.

Oh man, I get what you're saying, but the process is the payoff in a lot of cases. Like, the fun of cooking a big meal is in the chopping and stirring, not just eating it. Or fixing something yourself, the good feeling is in figuring it out with your own hands. If you only care about the final thing, you miss the whole point.
