Just read a USDA report that said over 30% of ground beef samples had antibiotic-resistant bacteria

I found it in a food safety journal while looking up something else. It really makes you question the whole supply chain and what we're getting from some processors. Do you guys ever worry about this with your own sources?

Wait, did you say over thirty percent? That's not a few bad samples, that's basically one in three packages. How is that even allowed to happen? It feels like the rules are failing if that many are getting through. I'm definitely going to be looking at ground beef in my fridge differently now.

That report is a real gut punch, isn't it? It basically means we're playing antibiotic resistance roulette with a Tuesday night taco. Makes you wonder if the only safe burger is one cooked into a dry hockey puck. My local butcher swears by his source, but now I'm side-eyeing even that. Guess I'll just add it to the list of things to quietly panic about while grocery shopping.

Can my panic list get any longer?

Wait, is that report talking about raw ground beef or cooked? Because that's a huge difference. If it's raw, then cooking it right kills the bacteria, so the risk is mostly for cross contamination. Like if you put the raw meat on a cutting board and then chop veggies on it without washing. That's where you'd actually get sick. So @jana_black, you don't have to turn your tacos into hockey pucks, just be super careful with the raw stuff and cook it to a safe temp. The antibiotic resistance part is scary for bigger public health reasons, but for getting sick from dinner tonight, proper handling is the key.
