Overheard a old timer butcher say he never uses the saw for lamb and it made me question my whole setup

That stuck with me because I use my bandsaw for almost everything lamb related. Now I'm wondering if I been wasting product this whole time without realizing it.

Bandsaw is probably fine for lamb honestly. The old timer butchers a lot of them come up with these weird rules from like fifty years ago before blades were what they are now. Modern saws cut clean and you're not losing any more meat than you would with a knife if you know what you're doing. Maybe it's just me but I'd rather zip through a rack of lamb on the saw than sit there hacking away with a boning knife and making a mess. End of the day the waste comes from bad technique not the tool you're using. If your bandsaw is set up right and you're not dragging bone dust through the meat there's no real problem.

Funny enough I used to be in the old timer's camp on this one, thought the saw was just for big stuff and you had to hand-cut everything delicate. But honestly reading this and your comment makes me realize I was probably just being stubborn about my knife skills when the saw would've been way more consistent. Gonna try zipping through a rack next time and see if it really is that clean.
