Pro tip: watched a guy at the Des Moines farmers market break down a whole hog in 40 minutes last Saturday
He had it on a folding table behind his trailer, just a bone saw and a couple of knives, and he was selling cuts straight off the carcass to anyone walking by. I stood there for maybe 15 minutes and he moved about $600 worth of pork before I even got my coffee. Made me think most of us hide the breakdown part in the back room, but this guy turned it into the whole show. Anybody else seen someone pull that off at a market, or is that just a Midwest thing?
