Rant: the sawdust on my block is doing more damage than a dull knife
Kept getting ragged cuts on my pork loins at the shop in Dayton and figured my blade was shot, but my old mentor pointed at the crud caked on my block and said that grit is dragging into every cut. Swapped to scrubbing it down with a stiff brush and hot water after every shift, and the cuts came back clean in under two shifts, so what are you all using to keep your boards from going slick?
