Saw a butcher in Austin using a different way to hang a side of beef
I was at a small shop in Austin last month, and the butcher there had the whole side hung from the aitch bone with a single hook, not the usual two-point setup. He said it lets the shoulder drop more naturally for easier seam work. I tried it back at my shop and it saved me maybe 15 minutes on breaking down a side. Has anyone else seen this method or have a different hanging trick?

Honestly that tracks with how the best tricks are always the simplest. It's like when you realize you can open a jar by tapping the lid on the counter instead of straining your hand. People overcomplicate stuff. My grandpa used to hang his tools on one nail in the shed, not a fancy pegboard, because he said it forced him to keep things in order. That butcher just cut out the extra step to let the meat do the work.

Yeah the part about your grandpa's one nail really got me. I used to be all about buying the perfect storage system for everything, but it just meant more stuff to manage. That simple limit of one spot per tool actually makes so much sense. You're right logan658, we add steps without even thinking. Now I look at any problem and ask what's the one nail solution, cutting out the noise to let the main thing work.

Hanging from the aitch bone with one hook might save time on the shoulder but it put way more stress on the whole carcass for me. The hip joint started pulling in a way that made the sirloin tougher to separate cleanly. I tried it three times and kept losing meat around the ball of the femur because the weight distribution was off. The two hook setup feels like it gives you more control even if it takes an extra few minutes. Sometimes adding a step stops you from wrecking a cut down the road.
