Saw a whole lamb breakdown at a little shop in Philly, felt like I was doing it wrong this whole time
I stopped into this tiny butcher shop on South Street last Tuesday, just to grab some sausage. The guy behind the counter was breaking down a whole lamb right there, no band saw, just a curved boning knife and a lot of patience. He had the thing in primal cuts in maybe 20 minutes, and every motion was smooth, no wasted effort. It made me realize I rely too much on my electric saw for speed and I probably lose more meat than I think. Anyone else ever watch a pro work and suddenly feel like you need to slow down and relearn the basics?

Honestly, watching a pro is humbling in the best way, but also, my electric saw has never once judged me for my clumsy hands. I bet that guy could break down a lamb while balancing a cheesesteak in the other hand, and I can barely get a chicken into pieces without feeling like I'm wrestling it. But you know what, you're right, I should probably put the saw away for a while and see if I can learn to feel the joints instead of just powering through them.
