That Saturday morning rush where I broke down 3 whole hogs in 2 hours flat completely flipped how I feel about working solo
Had a 8AM order for 12 pork shoulders and 20 racks of ribs drop in Friday night, showed up at 5AM Saturday and crushed it without a helper, now I actually look forward to those solo mornings when it gets crazy.

Wait, you broke down 3 whole hogs in 2 hours but the order was for 12 pork shoulders and 20 racks of ribs? That math doesn't add up for me lol. A whole hog breakdown gives you way more than just shoulders and ribs, you'd have bellies, loins, legs, and all that. Unless you meant you broke down 3 hogs specifically for that order and just used those parts? Either way, 2 hours for that much meat by yourself is a solid pace, I've had mornings where I'm still trimming fat 3 hours in with half the work. That feeling of crushing it alone when things get wild is pretty addictive though, makes you feel like a machine.

Nah I feel you @kai_webb91, that math is definitely weird if you think about it too hard. Probably what happened was they broke down those hogs for the shoulders and ribs specifically and the rest of the meat either went to other orders or got saved for later. I've been in that spot where you're just pulling what you need and the rest sits in the cooler for the next day or a different ticket. Two hours on three hogs is still fast no matter how you slice it though, especially when you're working alone and every minute counts. That feeling of being in the zone and just moving through it is honestly one of the best parts of the job.

Double down on what carter.joseph said, the rest of those hogs probably got broken down for family meal or stock the next day so nothing went to waste. Even if the math looks weird on paper, the rhythm of just moving meat through the cooler is its own kind of high.
