The beef chuck roll I get now is nothing like the ones I cut in '98

Back then, the marbling was consistent and the muscle structure was tighter, probably from different feeding practices. Anyone else notice the grain getting looser on certain primals over the past couple decades?

Ever think it was just nostalgia? I used to, but the side-by-side photos I saw last week... man, the difference is real.

Right? I was in the same boat for the longest time. Convinced myself I was just remembering things wrong. Then you actually see them next to each other and it's like a punch in the gut. Makes you wonder what else we've just gotten used to.
