The day I forgot to account for silver skin cost me 30 pounds of loin

I was working a Saturday morning shift at a small shop in Portland, three years back. Got a rush order for boneless pork loins, 40 pieces, and I was flying through them. Around piece 25 I got careless and left a strip of silver skin on one whole side, didnt even catch it until the customer called me out. Ended up having to trim and cut down 30 pounds into stew meat to sell it off, lost about $150 on the order. Has anyone else had a silver skin slip up that just wrecked your whole day?

Man, that's brutal. I've had the silver skin sneak up on me too, but nothing that bad. "Got careless and left a strip on one whole side" is exactly the kind of mistake that sticks with you the rest of the shift. Losing $150 on that order sounds like a rough lesson learned, but at least you caught it before the customer got too angry.

Got careless" is putting it mildly tbh. That's not a "sneaks up on you" mistake, that's just not double checking your work before it goes out. $150 is a tough pill but maybe that's the wake up call he needed.

Honestly, is losing a hundred and fifty bucks really that big of a deal for a shop? Sounds like the customer still got their product and nobody went hungry.
