Tried a $9 bargain bin boning knife against my $65 workhorse and I'm still annoyed about it
So I picked up a no-name boning knife from the marked down bin at Restaurant Depot in Queens about 6 weeks ago, mostly as a joke and a spare for the new guy. First shift I used it on a case of chicken thighs and it went through the joints easier than my regular knife that I've had for 4 years. The cheap one has a thinner flex which honestly made following the bone way simpler, and I barely had to saw at all. I kept waiting for it to dull or snap but it's held up through maybe 15 shifts now. I still feel weird grabbing it in front of the crew. Any of you ever get shown up by a knife you paid less than lunch for?
Had the same thing happen with a $12 cleaver from a spot in Flushing. Thing chopped through pork bones like they were carrots and my $80 one sat in the bag for a month. Honestly the cheap stuff just works sometimes and nobody in the kitchen cares what you grab as long as the case gets done.
