Unpopular opinion: I'm seeing way more requests for single muscle cuts

Last week at my shop in Boise, three separate customers asked for a chuck eye steak pulled out whole. That never happened three years ago, when everyone just wanted the big roasts. Are you guys getting this too, or is it just my area?

Look at it the other way, the big roasts were the weird trend. People are finally learning how to cook the good stuff right. A whole chuck eye is a killer steak for half the price of a ribeye, it just takes some skill to cut it out. This is customers getting smarter, not picky. Those roasts often got cooked dry anyway. This shift back to using the whole animal properly is what butchers used to do every day. It's a good sign, not a problem.

Yeah @nancyjones, but the big roasts weren't a weird trend, they were just what most people knew how to cook.

Maybe, but is it really that deep? People just want dinner.

Exactly, and it's like how we fix things now too. We used to just replace the whole appliance (you know, like a big roast), but now people look up a video and learn to swap the broken part themselves. It's that same move from big, simple solutions to smarter, hands-on ones that @nancyjones is talking about. Feels like we're getting better at seeing the value in the pieces, not just the whole easy thing.
