Unpopular opinion: The new guys are so focused on speed they're ruining the texture of a basic pork shoulder.

I've seen three apprentices in the last month rush the seam separation with a knife instead of their hands, and you can feel the difference in the finished roast, so what's the oldest piece of advice you had to learn the hard way?

Sounds like @ryanc57's chef had a pretty good throwing arm. I hope it was a wooden spoon at least.

Wait, a metal ladle? That's way worse than a wooden spoon (which still isn't great, obviously). A wooden spoon might just sting, but getting hit with a full metal ladle could actually do some damage. That old boss took the kitchen anger thing to a whole other, scary level.
