Update: my first brisket flat sale in Overland Park, KS
I've been cutting at the same shop for about 2 years now, mostly doing the routine stuff. Last month a regular asked if I could trim and tie a brisket flat for his Sunday cook. I did it my usual way, nothing fancy, and he came back this week asking for another one. First time someone actually requested me by name. Felt good, but I also wonder if I should have charged more for the extra work. How do you all price custom cuts like that, or do you just fold it into the per-pound rate?
