Wasted $200 on a 'professional' knife sharpener that ruined my boning blade
The edge rolled over on the first pork shoulder, and now I need a new one. Anyone know a good sharpening service in the Phoenix area?

Yeah, that's the worst. A lot of those "pro" services just run everything on a grinding wheel way too fast and burn the temper right out of the steel. It makes the edge soft, so it folds over exactly like you saw. For a boning knife, you really need someone who knows how to do it by hand on stones to keep the heat down. I had a good experience with a guy at the farmers market, he does it right there while you wait.

Man, that's the worst feeling. My buddy had the same thing happen with his favorite chef's knife last year. Took it to some guy with a van who said he was a pro, and the edge just turned to putty on a carrot. He ended up finding this old guy who works out of a tiny shed behind his house, uses nothing but water stones, and his knives are scary sharp now. I can ask for the number if you want.
