Am I the only one who just learned canned pumpkin is 100% pure squash and works in chili?
I was reading the label on a can of pumpkin last week at my kitchen table and saw the only ingredient listed was pumpkin, no spices or sugar. That got me reading more and it turns out most canned pumpkin is actually a squash called Dickinson, which is why it tastes so mild. So I dumped half a can into a pot of chili I was making and it made the whole thing thicker and a little sweet without tasting like dessert. My roommate still won't try it, but I think it beat the cornstarch I used to use. What other cans are secretly just one ingredient that nobody expects?
My buddy Dave grabbed a can of pureed beets at the store in Toledo last month thinking it was fancy cranberry sauce, and his kids still bring it up at every holiday dinner. Point is, a ton of cans are just one veggie with a boring label, and people walk right past them. Toss that pumpkin in your next batch of taco meat too, it does the same trick.
